Basil Pesto Pasta

Turtle tucker, dinosaur dinner, python pasta; it doesn’t matter what you call this basil pesto pasta, it’s delicious! This quick to prepare meal is made with lots of vegetables that are mixed with penne pasta through a basil sauce. You can serve it as is, or alongside salad and garlic bread to feed a larger group of people. It’s also great reheated for lunch the next day!

Basil Pesto Pasta

A tasty dinner meal from Keiki Early Learning:

Ingredients

Basil pesto sauce ingredients:

  • 1/2 tablespoon minced garlic
  • 4 cups spinach leaves, finely chopped
  • 1 cup fresh basil, finely chopped
  • 1 tablespoon lemon juice
  • 1 cup of grated parmesan cheese
  • 1/3 cup olive oil

Additional ingredients:

  • 1/2 bunch of broccoli, diced small
  • 1/2 bunch of cauliflower, diced small
  • 1 small zucchini, finely chipped
  • 500g penne pasta

Method

  1. Place Basil Pesto Sauce ingredients into a blender and blend until smooth.
  2. Cook vegetables in a large pot of water.
  3. Once cooked, drain water and add cooked pasta to the vegetables.
  4. Stir through Basil Pesto Sauce and simmer for 10 to 15 minutes until heated through.
  5. Serve into bowls and sprinkle additional parmesan cheese on top if desired.
