Nothing beats a creamy, comforting bake fresh out of the oven! This creamy tuna bake is packed with vegetables including cauliflower, carrots, and sweet potato, all brought together in a rich, cheesy sauce. So satisfying, you’d have no idea it’s also delivering a solid serve of protein, fibre, and vitamins in every mouthful. Using vegetable stock and milk as the base keeps it light without sacrificing any of the creaminess.

This recipe serves 4-6 and keeps well in the fridge for up to 3 days, making it a great option for meal prep or next-day lunches.

This creamy tuna bake is simple to follow and a great one to get your children involved in cooking. You can introduce concepts such as measuring and weighing, and let your child take charge of the stirring and assembling!

Creamy Tuna Bake Recipe

A tasty meal developed by Keiki Early Learning in collaboration with Nutritious Kids:

Ingredients

  • 500g pasta
  • 1 tbsp oil
  • 1 onion, finely diced
  • 1 tbsp minced garlic
  • 500g tuna, drained
  • 1 cup cauliflower, chopped
  • 2 carrots, peeled and chopped
  • 3 cups sweet potato, peeled and diced
  • 250ml vegetable stock
  • 250ml milk
  • 1 cup cheese, grated

Method

  1. Preheat oven to 180C and grease baking dishes (optional, this meal does not need to be baked)
  2. Cook pasta as per instructions.
  3. In a large pot cook cauliflower, carrot and sweet potato until tender.
  4. Puree with vegetable stock until smooth and creamy.
  5. Pour into large pot and bring to a simmer. Add milk and half the cheese. Stir until cheese has melted
    and the sauce is smooth. Add cooked pasta and tuna and mix to ensure even coating.
