Sweet, Soft & buttery ANZAC cookies

ANZAC Day is coming up next month, so it’s a perfect opportunity to bake some yummy ANZAC cookies! This no-sugar recipe is a Keiki favourite all year round – serve with fruit and milk for afternoon tea or pop into your child’s lunchbox.

Ingredients (makes approximately 12 cookies)

  • 125 grams of unsalted butter
  • 1/4 cup of maple syrup
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of bicarb soda
  • 1 tablespoon of boiling water
  • 1 1/2 cups of rolled oats
  • 3/4 cup of desiccated coconut
  • 1/2 cup of wholemeal flour

Method

1. Pre-heat oven to 150C and line a baking tray with baking paper.

2. In a saucepan over low heat, melt the butter, maple syrup and vanilla, stirring until the mixture starts to bubble. Remove from heat.

3. Combine the bicarb soda with the boiling water in a bowl, then add to the butter mixture, stirring through until it starts to foam.

4. Combine remaining ingredients in a separate bowl. Pour melted butter mixture into dry ingredients and mix well.

5. Roll 1 tablespoon size mixture into balls and place on the baking tray, flatten into a disc. Leave some room for the cookies to spread while baking.

6. Bake for 15 minutes or until golden brown. Allow to cool on trays before transferring onto a wire rack.
