Lunchbox Inspiration - Date and Weetbix Slice

Soon it will be time to dust off those lunchboxes and start planning what to fill them with. This quick, easy, no bake slice is sure to be a winner with everyone. Once the dates have soaked, it’s a blitz in the food processor and into the fridge. The end result will be a scrumptious slice that will keep bellies full and minds alert.

A favourite recipe from Keiki Early Learning:

Ingredients (serves family of 4-6)

  • 75 grams weet-bix (4 weet-bix biscuits)
  • 1 cup of dates (pitted and soaked in boiling water for ten minutes)
  • 1/2 cup of sunflower seeds
  • 1/2 cup of desiccated coconut
  • 30 grams of cacao powder
  • 30ml of maple syrup (or sugar free syrup)
  • 2ml of water

Method

1. Place weet-bix, dates, sunflower seeds, coconut, cacao, maple syrup and water in a food processor. Blitz until well combined and a ball starts to form. (If the mixture is not forming, add a small amount of extra water).
2. Line a baking tray with baking paper. Press the mixture into the tray.
3. Refrigerate until set.
