There's Nothin' Like a Muffin

Carrot Cake Muffins

This is the season of trips to the beach and picnics so here’s a great recipe for a delicious carrot cake muffin with juicy sultanas sprinkled throughout. These are great for an afternoon snack or to take on the go.

A favourite recipe from Keiki Early Learning:

Ingredients (makes 24 muffins)

  • 2 cups of wholemeal flour
  • 2 cups of plain flour
  • 1 tsp of baking powder
  • 1 tbsp ground cinnamon
  • 1 tbsp bicarb soda
  • 1 tbsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1 1/2 cups of sultanas (lightly coated in flour)
  • 200g carrots, grated in a food processor
  • 120g unsalted butter, melted and cooled
  • 1 cup maple syrup
  • 4 eggs
  • 2 cups natural yoghurt
  • 1 tbsp vanilla extract

Method

1. Preheat oven to 220c and line muffin tins, or line loaf tin.
2. In a large bowl, whisk the flour, baking powder, bicarb soda, ginger, cinnamon and nutmeg. Add the carrots and sultanas. Stir to combine.
3. In a separate bowl, whisk the butter and maple syrup. Add the egg and beat well. Add the yoghurt and vanilla, mix well. Add the wet ingredients into the dry ingredients and mix until just combined.
4. Spoon the batter into muffin tins and bake for 10-15 minutes or until baked through. Or if using a tin, pour in the batter and bake for 20-30 minutes or until baked through.
