Pikelet Tray Bake
Here’s a twist on a favourite treat – a pikelet tray bake! Just as yummy as a pikelet but instead of frying individual servings, you pour the batter into a tray and cook in the oven. This recipe swirls jam as a topping over the bake but you could try variations on the recipe such as dropping berries on top, tinned apple or even sliced bananas. The finished pikelet tray bake can be served as a morning or afternoon tea treat, popped into lunchboxes or eaten as a special breakfast!
Pikelet Tray Bake
A favourite recipe from Keiki Early Learning:
Ingredients
- 1 cup wholemeal plain flour
- 1 cup plain flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- ½ teaspoon bicarb soda
- ½ teaspoon salt
- 2 cups milk of choice
- 2 large eggs
- 2 tablespoons margarine, melted
- 4 tablespoons jam
Method
- Preheat oven to 200C (180C fan forced).
- In a large mixing bowl, whisk together flours, sugar, baking powder, bicarb soda and salt.
- In a separate bowl, whisk together milk, eggs and margarine.
- Gently pour wet ingredients into dry ingredients and stir until just combined. Try not to overmix to prevent the batter from becoming too tough.
- Pour the mixture into a baking tray lined with baking paper.
- Drop small dollops of the jam onto the top of the mixture then swirl it through the batter using a knife creating a pattern on top.
- Bake for 12minutes, until golden brown and cooked through.
- Remove from the oven and allow to cool before slicing and serving.
